Commander and Chief in the Kitchen
At first glance, you may not realize that you are about to experience BBQ at its best. Don't be fooled by the low key location, or the way they quietly go about the business of the "Q". These guys know what they are doing. The Chef is a "Commander and Chief" in the kitchen, consistently giving us the best of BBQ and Soul Food. A Celebrated Chef does BBQ?
Say the words "barbeque joint" and the chef's face cringes at the thought of the average rib shack where the sauce is needed to cover the flavorless meats. Big City BBQ was developed by a celebrated executive chef from the resort industry, and at Big City, he endeavors to do for barbeque what PF Chang and Pei Wei did for Chinese food. This restaurant is about food quality first, supported by a deep meandering kitchen designed to support a growing catering business. I tried samples of the brisket, pulled pork, and turkey, but I ordered the fried pork chops to go with some soul food side dishes, mixed collard greens and fried okra. The Old South Returns
I haven't had food this good since I was in the South. Big City's combination of soul food and barbeque is different than traditional barbeque, and higher quality than most "cue" joints, some of whom buy cheap meats and try to compensate by overcooking them.
