Where Breakfast Is King! The Irish Rose in downtown Pagosa Springs is a small and bustling breakfast and lunch cafe, conveniently located just across from the famed hot springs. Many mornings you can see the guests from the Spring Inn walking across the San Juan River bridge to enjoy the heartiest breakfast in this part of Colorado. The menu is extensive with a huge bow to Irish favorites. From the daintiest of appetites to the heartiest mountain man, everyone is sure to get just what they want at the Irish Rose. Tourist families, single travelers, and large groups of "coffe club" regulars are always greeted with great eats and friendly service. The last time we had breakfast, the place was packed and all the wait staff were pooling their efforts to take care of every table. This can make for some disjointed service, but the friendly servers and the great food more than make up for any delays. I had a delicious cheese omelette with seasoned potatoes and my companion really enjoyed her hearty sausage and eggs. Grits, oatmeal, and an array of breakfast sides are also available. The cute dining room is decked out with all things Irish in this cheerful place where the road truly rises to meet you. Try the Irish Rose the next time you happen on Pagosa Springs!
