Rave review for a rarity
The Jackson Hotel in Poncha Springs, what can I say, this is a gem of a gem. New owner Craig has restored it to it's 19th century glory days.
This is a right proper steakhouse, excellent food, darn friendly service, and an atmosphere that's hard to beat. A little hint, the flatiron steak is hands down the best I have evr had in a restraunt. A licensed chef myself, it is not often that I come across an establishment that blows me away but this is it.

If you want a steak in Kansas but you are in Colorado, don't go anywhere else but the Jackson. Skip the beans unless you have the stomach and heavy duty life style of a ranch hand- if you don't, their combination of tasty protein is just what you need to recover from whitewater rafting or skiing. Located 45 seconds from my house by foot, the karaoke on wednesday night by my neighbors is awesomely common and reminiscent of the fun all those outlaws and politicians (the ones who made our country great and slept in this hotel) had with us when they stayed here.
