Exquisite Fare in the High Country Though I have eaten in thousands of restaurants all over the world, I am always amazed when I find one so close to home. The High Country Restaurant and Bar is a rustic personification of Northern New Mexico, located on the outskirts of Chama, Home of the Cumbres and Toltec Narrow Guage Railroad. Chama is located at 8,000 feet in the heart of the Rockies. Che Johnston is the general manager and head chef of this restaurant, and, upon tasting your first meal, it will become apparent that this 23 year old man has a gift, as well as training . Salmon and Halibut are grilled with various sauces and garnishes that compliment the food, and excite the taste buds. His mix of sweet, tart, salty and spicey, remind me of the best Thai cuisine. The Mexican dishes are well prepared, and the chiles are flavorful without being overpowering.The staff is very professional, courteous and personable. On the weekends one os treated to live music, by Deena and Andy (Country) David Allen Hammond and friends (the guitar work is superb) or by various other top notch entertainers. High Country Saloon Have eaten at the High Country Saloon morning, noon, and night. We take our horses to Chama and ride in the Chama area and Colorado nearly every summer. Our sons hunt around the Chama area in the fall. We love going to the High Country for eating or having a drink. It has always had great food, whatever your taste. The service has always been great and the staff excellent. We have never felt like strangers and the townspeople and staff remember us just like we were there yesterday. GREAT PLACE!!!!! Great meal!! On Sept 25, 2007 I had the great pleasure of eating at the High Country Restaurant and what a surprise. I had the best chile relleno I have ever tasted (and I have eaten in a number of Mexican restaurants) and the other person with me said their filet was as good as any they had eaten in any of the top steak houses. I wish it weren't so far from Las Vegas, but it was a nice way to end a 640 mile motorcycle ride. [03 Oct 2007 16:08:39]
