It's been nearly ten years since kismet led me to Blanca's Cafe as my husband and I were traveling through Roswell to Sante Fe. I tell everyone about the FABULOUS chile relleno I ate at Blanca's, very simple yet divine. I live in Austin, Texas, now where I am surrounded by Mexican restaurants but no one comes close to Blanca's chile relleno. If I'm ever in Roswell again, I will definitely stop in for another one.
