Hudson Valley, Ellenville, Ulster County WE found this great restaurant in Ellenville, Aroma Thyme Bistro. We are meat eaters except the one lonely vegetarian. We were all pleased by the number of choices. The Kobe Meatloaf was incredible, our plant eating friend loved the Indian braised Chickpeas & Lentils. And we are all wine drinkers, we wanted to drink our way through, but the wine/beer guide informed us there are more than 300 wines and 130 beers. We are coming back for their beer club, first Thursday of the month. The theme here is a more healthier options while not sacrificing any flavor, 25 from Zagat. We Love This Ellenville Restaurant WOW! Our favorite place in the Hudson Valley. Can't say enough great things. Try their tuna appetizer, curry shrimp, Kobe skirt steak, or braised lamb shanks. A Haven for Hudson Valley Vegetarians! Being vegan and in New York's Hudson Valley can leave you very hungry! My wife and I discovered Aroma Thyme 14 months ago when spending our Valentine's weekend in Saugerties and couldn't have been happier. The food was outstanding and is accompanied by a wonderful wine and cocktail menu. Marcus (chef and owner) took the time to visit our table and gave wonderful recommendations when he was told by the staff that we were vegan. Aside from how delicious all of the dishes are, what truly stands out is the quality and freshness of the ingredients. We had never had homemade seitan prior to that night, and now cannot imagine having it any other way.
My review only gets better from here... Fast forward a year and my wife and I are again in the Hudson Valley area visiting some local wineries on Feb. 13th more as an excuse to go back to Aroma Thyme really. Well, we probably should have checked their website for when they are open, as it turned out they are closed every Tuesday (but are planing to extend their hours soon). We didn't learn this until we reached the front door of the restaurant and found it locked. Seeing us at the door Jamie (owner) came out to explain that they were closed and preparing for tomorrow's Valentine's rush, but seeing the disappointment in our faces she asked where we were from. When we explained that we had driven two hours to visit Aroma Thyme, she insisted that we come in and eat. We tried to turn down the invitation, but she and Marcus insisted and proceeded to strike up the oven and serve us yet another outstanding meal. It was absolutely amazing. Marcus and Jamie made us feel so welcome and truly are wonderful hosts. As it turned out a few more local customers, seeing the lights on walked in while we were eating, Marcus and Jamie insisted they come in too and didn't bat an eyelash about working on their night off. We can't thank them enough or recommend more highly their restaurant. We have plans to visit more wineries in June with some friends and have made a trip to Aroma Thyme for dinner our one requirement for the day. [22 Apr 2007 12:58:47]

Excellent, Enjoyable Eatery in the Catskills Aroma Thyme is a gem of a bistro tucked into the gorgeous NY Catskill/Shawngunk region.
All the food is exquisitely prepared, with something for everyone. The wine list is quite extensive with expert and informative guidance if you are keen to try something new.
All menu items are prepared with maximum health in mind, also choosing sustainable and, if possible, local food options.

Bad Service, Mediocre Food Although the atmosphere was great and the menu had potential, the music was too loud and the owners wife (presumably) kept complaining about her staff and making excuses. our time was monopolized by the constant onslaught of employees. we must have had 30 visits to our table. we could smell the dumpster outside and there were a lot of flies in the dining room.
