REPLACEMENT CHEF INSISTS ON MAKING FRESH MOZZARELLA - The Columbus Dispatch, By Jon Christensen, 14 April 2005; Derek Michael had less than a day's notice that he was to be the executive chef at the brand-new Abbracci steakhouse in the Arena District. He received the call on his day off from R.J. Snappers, where he headed the kitchen; the chef at the sister restaurant had quit during opening week. In about two weeks, Michael managed to have a revised menu in place, having reworked many of the recipes on the menu he inherited. Four months later, he has managed to put still more of his mark on the kitchen. One notable change: He makes his own mozzarella each day. Michael starts with the fresh mozzarella curds. Wearing thick, well-insulated gloves, he breaks them into extremely hot salt water, massaging them until the gritty texture becomes smooth and somewhat elastic. The cheese is then shaped into small rounds and placed in a brine of salty cold water. It cures there for about four hours, when it's ready to use in a salad ($6). Michael arranges slices of the mozzarella with matching slices of tomato, which are dressed with shredded fresh basil and a syrupy reduction of balsamic vinegar. - suggest change

The best meal I have ever had!
I had dinner at Abracci last weekend and was absolutely blown away by the food! We ordered several appetizers, entres and desserts and every one was better than the last! Each one was creative, unusual and DELICIOUS! The special of the night...homemade ravioli in a smoked yellow tomato sauce was "to die for". The signature dessert...a chocolate cayenne creation was the most decadent, yet unusual dessert I have ever experienced...and it was an experience not to be missed!!    [29 Jun 2005 11:32:43]

credit card frauds

A Must Go To....
I had a dinner there for work. It was between Abbracci and Hyde Park and at first I was dissapointed because I had never been here and I adore Hyde Park. The food here was fantastic. The service was impeccable. The wine selection and quality was good. I also felt price was fair. I would highly highly recommend you see for yourself. I will certainly be coming back here again. Poor excuse for
My Saturday night dining experience was less than stellar. For the prices that they were charging, I would have expected MUCH better food quality and ESPECIALLY service. We had to send back one dish because it was so horribly prepared. The server was unpolished, the manager downright rude, and frankly, I can't imagine ever wanting to return. I live in Chicago, and the less than mediocre food and service would never last more than a week. I know Columbus has some catching up to do, but what a disappointment this restaurant was. Great Wine list!
This fine Italian eatery offers up wonderful antipasti, soups, and secundii - and a great filet! But if you got here, spend the money on a bottle of Masi Amarone - a smooth Italian red wine of high voltage - better designate a driver!    [22 Oct 2006 12:52:41]
