Legendary Haven for All Five Senses As a native of La Grange, one of the best things about coming back home is definitely Prause Meat Market.
With each visit I awed (and still do) at the mounted fished and wildlife that adorned the walls, sometimes wondering if I could ever match such trophies.
How I remember as a child, staring wide-eyed at the huge butcher block - and the seemingly endless display of beautifully cut meats, "naked" chickens, and fresh pan sausage.
Better still were the aromas exuded by this delightful smorgasbord and complemented by the AWESOME smoke that flavored Prause's famous barbecue.
My ears even tickled at the song of great knives sliding along the metal of a honing rod, the swift steps of busy feet on sawdust, and the gentle din of locals' voices as they greeted each other in the long line that was always shortened by good conversation.
How I could not wait to get home and unroll the red paper which held my treasured meal! Each savory bite slowly satisfied my tongue AND tummy!
Best of all was the feeling of warmth in the market - not from steaming hot barbecue, but rather from the Prause family. No matter the darkness that may have begun your day, the Prauses made certain your day proceeded with sunshine.
After graduation I moved around quite a bit, but always managed to stop by Prause's for barbecue whenever I came to town.
Twenty-plus years later, my husband and I have "come home" to raise our little girl (who's almost three) in the country.
