Dessert

Unbelievable Pan-Fried Oysters
On a late afternoon last spring, I ducked into this café to get out of the rain and felt that I should order something. I sat at the bar and half-heartedly ordered pan-fried oysters. I slowly drank my micro-brewed dark draft beer, hoping that it wouldn’t go directly to my head on an empty stomach. I waited there for some 40 minutes, wondering why the oysters were taking so long. They finally arrived, four good-sized oysters with a rich golden brown color. I cut one open with my fork, and immediately, the texture of the oyster surprised me. It was very firm, but not completely hard, the result of being slowly pan-fried until most of the moisture is gone. The taste is amazing, concentrated oyster flavor encased in a crusty outer layer, and the interior is still moist, adding a fresher oyster taste to the experience. I sat there for another half-hour, savoring the best oysters that I had ever eaten. I went back again in the summer, but the oysters were out of season and not on the menu.
