Vietnamese pancake
Translated as pancake, this is a wrap of some kind, nothing like a pancake, maybe rice and egg mix, that comes up yellow and crunchy. It is folded over before cooking, like a western pastie, and sealed down the front as a pastie is also. It is nothing like the western notion of a pancake, no dough or flour detectable. It is not sweet. It is filled with bean sprouts and into the banh are set a few shrimp, beheaded, but still with carapace, gills and legs.

We also ate some fresh spring rolls, favourites with tourists, and some shrimp spread around sugar cane sticks.

Heinekens cold.
